Main research field

Our laboratory focuses on the action of microorganisms in food. Conventional food fermentation and food safety are our main concern. Recently, we have been studying traditional foods such as kimchi and fermented soy products. We will carry out research on the role of various fungi during fermentation and microbial action for the production of wholesome foods. In particular, we are interested in the action of enzymes in food materials and enzymes secreted by contaminated microorganisms. Studies on the development of convenient methods of using Korean traditional liquor are also underway.
